Why do you hide the hole cards of a player if he is the only one can see them?

I think because this way other players can see when you’re checking your cards. If a card comes on the table and someone immediately starts checking his cards it could be an interesting card for him/her. Could be a clue for you to be careful with raising for instance?

Yes, exactly, in this way you can fake facts and bluff. That and a few other tricks are enough and no one knows whether you have something or not.
